Thandai for Holi

Happy Holi! Thandai is a refreshing and cooling drink usually made for Holi, the Festival of Colors! This delicious drink is packed with whole spices like saffron, fennel seeds, cardamom pods, along with almonds, cashews and pistachios!

Ingredients

Thandai Powder – yields about 1 cup

  • 1/4 cup almonds
  • 2 tbsp cashews
  • 2 tbsp pistachios
  • 15 green cardamom pods
  • 1 tbsp rose petals
  • 1/2 tsp whole black peppercorns
  • 1 tbsp fennel seeds
  • 1/4 tsp saffron
  • 1/2 tsp cinnamon powder
  • pinch nutmeg Powder

Thandai

  • 1 cup Thandai Powder
  • 4 cups whole milk
  • 3 tablespoon Rose water
  • 1/4 cup sugar adjust according to taste
  • saffron for garnishing
  • rose petals for garnishing
  • sliced nuts for garnishing

Instructions

Thandai Powder

  • Add whole spices to a spice grinder and blend until fine powder.
  • Transfer spice powder to a bowl.
  • Add nuts to the spice grinder and blend until find powder.
  • Transfer into the bowl with spice powder, add cinnamon and nutmeg powders, and mix until combined. Set aside.

Thandai

  • Add milk, sugar and Thandai powder to a pot over medium heat and whisk well.
  • Bring the Thandai to a boil and then remove from heat.
  • Allow the Thandai to cool for 30-60 minutes before mixing in the rose water.
  • Strain the Thandai through a sieve before serving.
  • Pour into glasses, garnish with saffron, rose petals, and sliced nuts, and enjoy!
