Orange Cranberry Granola

After making homemade granola, I will never go back to store bought granola! This recipe is so simple, and very customizable depending on what ingredients you have in your pantry! For this orange cranberry granola, I used orange olive oil. However if you do not have that in your pantry, you can use plain olive oil or coconut oil with either orange zest or orange extract for the citrus flavor! I just used what nuts and seeds I had on hand, and the mix turned out amazing!

This granola can be eaten plain as a snack, with milk like cereal, or topped on a yogurt parfait or smoothie bowl. The options are endless! Simply combine the ingredients in a bowl, give a good mix, and bake! Let the mixture cool completely to allow the granola to crispen. For this batch, I let the tray sit in the oven (turned off) overnight to cool, and the orange cranberry granola was perfect! Store the granola in an airtight container at room temperature for 1-2 weeks!

Orange Cranberry Granola

Servings 4 cups

Ingredients

  • 2 cups rolled oats
  • 1/2 cup pistachios chopped
  • 1/4 cup toasted coconut chips
  • 1/4 cup pumpkin seeds
  • 1/4 cup dried cranberries
  • 1/4 cup orange olive oil
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • 1 tbsp vanilla extract

Instructions

  • Preheat oven to 350 F and line a 9×13 baking tray with parchment paper.
  • In a large mixing bowl, combine all of the ingredients and mix until well combined.
  • Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer. Press down with the spoon to create the granola clusters.
  • Bake until lightly golden, about 20 minutes, stirring halfway.
  • Let the granola cool completely, at least 45 minutes or longer.
  • Break the granola into pieces with your hands or a spoon, and store in an airtight container at room temperature for 1-2 weeks.
  • Enjoy!
