pistachios

toasted coconut chips

pumpkin seeds

dried cranberries

orange olive oil

maple syrup

vanilla extract
Instructions
Preheat oven to 350 F and line a 9x13 baking tray with parchment paper.
In a large mixing bowl, combine all of the ingredients and mix until well combined.
Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer. Press down with the spoon to create the granola clusters.
Bake until lightly golden, about 20 minutes, stirring halfway.
Let the granola cool completely, at least 45 minutes or longer.
Break the granola into pieces with your hands or a spoon, and store in an airtight container at room temperature for 1-2 weeks.
