Black Bean Soup

Since it’s bean soup-er cold recently, this hearty and healthy black bean soup is perfect to stay warm and cozy! ☃🥑👩🏻‍🍳🔥

I topped mine with avocado, but you can add green onions, cheese, salsa, or tortilla chips.

Black Bean Soup

Ingredients

  • 1 tbsp olive oil
  • 1 carrot diced
  • 1 white onion diced
  • 4 garlic cloves minced
  • 1 jalapeño diced
  • 2 tbsp cumin
  • 1 tsp paprika
  • 1 bay leaf
  • 1 tsp salt
  • 1 tsp pepper
  • 2 cans of black beans drained
  • 2 cups veg stock
  • Avocado for topping diced

Instructions

  • Sauté the jalapeño, garlic, onion, and carrot in olive oil for about 5-8 minutes until soft.
  • Add the cumin, paprika, bay leaf, salt and pepper and stir.
  • Add the black beans and veg stock. Bring it to a boil and then let the soup simmer for about 30 minutes.
  • Remove the bay leaf. And transfer about 1 cup of the soup into a separate bowl.
  • Use an immersion blender to purée the remaining soup until smooth.
  • Mix the separated soup back in with the blended soup.
  • Add your toppings and enjoy!
