Ingredients

carrot

white onion

paprika

bay leaf

cans of black beans drained

cups
veg stock
Avocado for topping

Instructions
Sauté the jalapeño, garlic, onion, and carrot in olive oil for about 5-8 minutes until soft.
Add the cumin, paprika, bay leaf, salt and pepper and stir.
Add the black beans and veg stock. Bring it to a boil and then let the soup simmer for about 30 minutes.
Remove the bay leaf. And transfer about 1 cup of the soup into a separate bowl.
Use an immersion blender to purée the remaining soup until smooth.
Mix the separated soup back in with the blended soup.
Add your toppings and enjoy!
