This past weekend I played around with fresh pasta dough, and made this stunning vegan charcoal pasta dough! The black dough is perfect to make lasagna, linguini, ravioli, or even bowties! The pasta would go perfect with spinach pesto, red sauce, or even vodka sauce! All you need to make this eggless pasta dough is flour, food grade charcoal powder, water, salt, and olive oil.

A few notes about the ingredients and equipment to make this vegan charcoal pasta dough. Be sure to use food grade charcoal powder for this dough. If the dough is too wet, add 1 tbsp of flour at a time. If the dough is not coming together, add 1 tbsp of water at a time. The dough should form into a ball, and not stick to your hands. If you do not have a stand mixer, you can make the dough by hand as well.

The dough stays well in the fridge for 2-3 days. If the dough is not used within 3 days, put it in the freezer. To thaw, let it sit out at room temperature for a few hours.

Equipment

  • Stand Mixer

Ingredients

  • 1/2 tbsp food grade charcoal powder
  • 1/3 cup warm water
  • 1/3 cup all purpose flour
  • 2/3 cup semolina flour
  • 1 tsp olive oil
  • 1/2 tsp salt

Instructions

  • Combine the charcoal powder and water in a bowl. Mix until completely combined.
  • Add the flours, salt, and olive oil into the stand mixer.
  • Add the water charcoal mixture into the stand mixer. Mix on speed 2 until combined.
  • Once the dough is together, knead for 2-3 minutes on speed 4.
  • Enjoy in your favorite pasta shape!
