Almond Flour Pancakes

Mother’s Day is coming up tomorrow! Just in time to make these almond flour pancakes. The best part is, that these are very customizable. Feel free to add cinnamon, berries, chocolate chips, or orange extract! As always top the pancakes with butter and maple syrup! My favorite maple syrup is from a local Pittsburgh business, Paul Family Farms.

Pancake Cereal

Got a chance to try the viral pancake cereal! Most people used an empty condiment bottle or a ziplock back, but I used a spoon and gently put about 1 tsp of batter on a nonstick pan. The little dollops were about 1 inch in diameter and about 1 inch apart. I added some berries for a pop of color and a drizzle of maple syrup on top!

Almond Flour Pancakes

Ingredients

  • 1 cups almond flour
  • 2 tbsp All-Purpose Flour
  • 1 tsp baking powder
  • 1/2 teaspoon salt
  • 1 tbsp sugar
  • 1 large egg
  • 1 tbsp melted butter
  • 1/2 cup milk
  • 1/2 tsp vanilla extract

Instructions

  • Whisk together the dry ingredients and set them aside.
  • Beat together the eggs, melted butter, milk, and vanilla.
  • Whisk into the dry ingredients into the wet ingredients.
  • Allow the batter to rest for 10 minutes, while you preheat your nonstick pan to medium heat.
  • Spray the pan with oil, or add some butter.
  • Pour about 1/4 cup of batter at a time onto the pan.
  • Cook the pancakes for 1 to 2 minutes, until their tops are bubbly, their edges look dry, and their bottoms are golden brown.
  • Turn the pancakes over and cook for an additional 1 to 2 minutes, until brown.
  • Enjoy with butter and syrup!
