Almond Flour Banana Bread (GF, DF, Paleo, Keto Friendly)

It seems like everyone is making banana bread while being home during this quarantine. So, here’s another banana bread recipe, but this one is refined sugar-free, grain-free, and oil/butter-free. This banana bread is overall very healthy and perfect for any time of the day! Eat it for breakfast, snack or dessert!

I used my Pumpkin Bread recipe as a base for this low carb banana bread, and it turned out so good! I added no sweetner to the batter since the bananas that I used were very ripe. However, if your bananas are not that ripe, you can roast them in the oven before hand to ripen them or add 1/4 cup of honey or maple syrup.

When I went to Bali at the end of 2019, I picked up fresh vanilla beans from one of the markets. This was the first time I baked with real vanilla beans. For reference, 1 vanilla pod is is about 1 tbsp of vanilla paste/extract. Just cut open the pod and used a butter knife to scrape the vanilla beans. you can see the vanilla beans in the batter as little black speckles. I saved the pod to make some vanilla chai in the future.

Ingredients

  • 3 organic eggs
  • 3 ripe bananas
  • 1 tbsp vanilla extract
  • 2 cups blanched almond flour
  • 1 tsp baking soda

Instructions

  • Preheat oven to 350°F.
  • Line a small loaf pan with parchment paper.
  • Mash the bananas in the medium bowl.
  • Add the eggs in one at a time.
  • Stir in the vanilla extract.
  • Mix in the almond flour and baking soda until there are no lumps.
  • Transfer the batter to the loaf pan and gently tap the pan on the counter top to evenly distribute the batter (and remove air bubbles).
  • Bake the bread for about 50 minutes until a toothpick inserted in its center comes out clean.
  • Carefully remove the bread from the pan and transfer it to a wire rack
  • Cool the bread completely for about 2 hours.
  • Enjoy!
