Purple Cauliflower Crust Pizza

Wow!  This was the first time I tried making Cauliflower Crust from scratch and I loved it!  It was pretty simple, just pulse the cauliflower, mix in a few ingredients to bind the crust, and then bake!  Make sure you squeeze out all of the water from the cauliflower, or the crust wont be as crispy.  Next time, I am going to try using a cheese cloth instead of paper towels.

I was curious to see how the purple color would turn out.  When I microwaved the cauliflower, it seems like I lost some of the color.  But once the crust was done baking, the purple definitely got more vibrant!  Perfect for summer!

Purple Cauliflower Pizza Crust

Ingredients

  • 1 purple cauliflower head cut in large pieces
  • ½ cup shredded pepperjack cheese
  • ½ tsp dried italian seasoning
  • ½ tsp dried basil
  • ½ teaspoon salt
  • ½ tsp garlic powder
  • 1 egg

Instructions

  • Preheat oven to 500˚F.
  • Pulse the cauliflower in a food processor.
  • Microwave pulsed cauliflower for 4 minutes.
  • Once cooled, use a clean towel to wring out as much liquid as possible out of the cooked cauliflower.
  • Mix cauliflower with cheese, italian seasonings, basil, salt, garlic powder, and egg.
  • Line a baking sheet with parchment paper.
  • Place cauliflower mixture in the middle and spread out to form a circle.
  • Bake for 15 minutes, or until the crust has become golden brown in the center and on the edges.
  • Top with your favorite pizza sauce and toppings.
  • Bake for another 5-7 minutes, or until the cheese has fully melted.
  • Enjoy!
