Coconut Matcha Chia Seed Pudding

Happy St. Patrick’s Day!! This Coconut Matcha Chia Seed Pudding will sham-rock your world! ☘

Chia Seed Pudding is a high protein, quick, healthy breakfast!  That’s a triple threat!  I used coconut milk in this pudding so I could pretend it was a matcha latte with coconut milk.  I love meal prepping chia pudding for a quick grab and go breakfast before work!  Be sure to add any toppings and flavors in after the chia seeds have soaked in the milk.

Coconut Matcha Chia Pudding

Course Breakfast
Inactive 3 hours
Servings 2

Ingredients

  • 1/4 cup chia seeds
  • 1 cup coconut milk
  • 3 tbsp matcha powder
  • honey optional

Instructions

  • Mix chia seeds with milk
  • Let it sit for at least 3 hours (or overnight!)
  • Mix in matcha powder.
  • Enjoy!
