Rose Chia Seed Pudding

Rose chia seed pudding is a great easy breakfast or snack to make. It is high in protein, fiber, can be low in sugar with your choice of sweetener, and the rose water adds a unique flavor. Simply combine the ingredients and leave overnight in the fridge to allow the chia seeds to soak up the milk.

Wow! I posted a picture of making rose chia seed pudding on my Instagram story yesterday, and I got so many messages asking for the recipe. Some recipes I have in mind for weeks or months before I get around to them, but this one came out of nowhere. Organic Valley was so kind to send me their new Ultra milk to try, along with an overnight oats recipe and a mason jar. I don’t eat a lot of oatmeal, so I thought to try the Ultra milk with chia seeds to make chia seed pudding. I also have been obsessed with rose water and want to use it in everything. So, I thought to try rose chia seed pudding. This reminded me so much of falooda (minus the ice cream and vermicelli), which reminds me of spring and I just want the weather to get warmer.

Below is the recipe I tried, and the rose flavor is strong. If you don’t want a strong rose flavor, cut the rose water in half. Also, keep in mind the recipe is using rose water, not extract. I got Swad rose water from my local Indian grocery story (Patel Brothers), but you can also purchase it on Amazon here.

To add a natural light pink color, I crushed up some freeze-dried raspberries and mixed it in. I also topped the rose chia seed pudding with blackberries in the morning for more flavor.

To make this recipe vegan, substitute the whole milk with coconut milk. To make this recipe low carb, use stevia as choice of sweetener (I used about 12 drops of liquid stevia). Rose Chia Seed Pudding

Ingredients

  • 1 cup of whole milk (or any other)
  • ¼ cup choice of sweetener (honey, maple syrup, agave… or 12 drops liquid stevia)
  • ¼ cup chia seeds
  • 1 tsp rose water
  • ¼ cup freeze dried raspberries crushed (optional)
  • ½ cup blackberries (optional)

Instructions

  • Combine milk, sweetener, chia seeds, rose water, and optional freeze dried raspberries in a mason jar.
  • Close the lid and give the jar a good shake, until well combined.
  • Let the chia pudding sit overnight in the fridge.
  • Top with berries and enjoy!
