Instructions
Pressure cook the cauliflower and eggplant on high for 8 minutes.
Cook garlic and onion in butter for about 5-8 minutes until onions are translucent.
Add in peas cook for an additional 5 minutes, until soft.
Add in chopped spinach and cook until wilted, about 1 minute.
Add pav bhaji masala and chili powder and stir.
Add tomatoes and cook for a few minutes, until soft.
When the cauliflower and eggplant are done cooking, use a masher or immersion blender to mash the veggies.
Add in the mashed cauliflower and eggplant to the pot.
Turn the heat off, and mix in lemon juice and chopped cilantro.
Top with butter and garnish with cilantro and red onion.
